This salad came about during a rare moment in my life when I was not quite sure what I wanted to eat. I was sitting staring at the refrigerator while I was working on this site and visualizing what I knew was in the fridge. I could “see” a package of Sam’s Club Caesar Salad Kit, but was not really in the mood for Caesar Salad. I knew there were boiled eggs in there because I had boiled 18 eggs that afternoon while experimenting with my Ninja Foodi and using the pressure setting to boil eggs for the first time, which was a life changer. I doubt I will ever boil eggs any other way again. 4 Minutes under pressure, 4 minutes natural release and then put them in ice water. They practically peel themselves and I have never found any green on the yokes. They are literally perfect and no watching the pot boil or timing how long after I have put a lid on the pot. Just put them in, set the timer and wait for the beep and I had boiled 18 perfect eggs, which were sitting there waiting to be eaten. I knew I had bacon bits in there and avocados, that were ripe.
Suddenly it hit me, cut up the eggs, put in some bacon bits, mash up the avocado, with a little granulated garlic and then mix it all together. There was enough for several people, but I ate every little morsel, or, as my father used to say, “every last ort”. It has become one of my favorite words, just because it’s cute, real and off the wall.
Guacamole Caesar Salad
Equipment
- 1 Ninja Foodi
- 1 Salad Bowl
- 1 Oil Sprayer
Ingredients
- Romaine Lettuce I use the Caesar Salad Kit from Sam’;s Club because it is so much better than the choices at Walmart or Kroger
- 2 Avocados – Ripe
- Garlic Powder (to taste) or Granulated Garlic
- Bacon Bits (to taste) Real Bacon Bits
- 6 Boiled Eggs
- Juice of Half a lemon and/or Avocado Oil or Olive Oil Spray
Instructions
- Pour the Romaine from the Caesar kit into a bowl
- Cut up six boiled eggs
- Mash up 2 Avocados with the lemon juice or avocado or olive oil and a sprinkling of granulated or powdered garlic (you can also make any Guacamole recipe of your choosing here).
- Put 1 Cup of Parmesan Cheese (or cheese of your choice)
- Put however many bacon bits you choose. I love bacon, so I go overboard
- Mix it all together, gently
