The mixture here is something I came up with while staring into my refrigerator, actually at my refrigerator, with the door closed. I knew what was in there and was trying to figure a way to use it. I had a Caesar Salad kit in there, but was not really in the mood for Caesar salad. I also had several cheeses, some bacon bits, avocados and eggs. I decided to mash up the avocados, with a little granulated garlic and spray them with olive oil (because I didn't have any lemon and I read Olive Oil would slow the oxidation process), put some bacon bits in there, along with diced boiled eggs, thus came about my Guacamole Caesar Salad. The next day I made it again and took it to a monthly pot luck I attend and it was a massive hit, with at least five people asking who made the salad and wanting the recipe, and thus here it is in our recipes.
Romaine LettuceI use the Caesar Salad Kit from Sam';s Club because it is so much better than the choices at Walmart or Kroger
2Avocados - Ripe
Garlic Powder (to taste)or Granulated Garlic
Bacon Bits (to taste)Real Bacon Bits
6Boiled Eggs
Juice of Half a lemon and/or Avocado Oil or Olive Oil Spray
Instructions
Pour the Romaine from the Caesar kit into a bowl
Cut up six boiled eggs
Mash up 2 Avocados with the lemon juice or avocado or olive oil and a sprinkling of granulated or powdered garlic (you can also make any Guacamole recipe of your choosing here).
Put 1 Cup of Parmesan Cheese (or cheese of your choice)
Put however many bacon bits you choose. I love bacon, so I go overboard
Mix it all together, gently
Notes
The notes on this recipe are many and varied. Let's just say you can make a full on Guacamole or you can just mash up avocado, you can use Parmesan cheese or any cheese of your choice. You can have bacon or chicken, pulled pork or steak bites or any combination you prefer. Go for it your imagination is your only limitationas for boiling eggs, I have a Ninja Foodi and I will never boil eggs any other way again unless I have to have eggs and do not have access to my Ninja. Merely put a cup of water in the Ninja, put you rack in and place eggs on the rack. I have done as many as 18 at a time. Put the pressure lid on and set the pressure for 4 miniutes with steam release of four minutes then release pressure take eggs out (carefully, they will be hot) and put them in a bowl of ice water. Eggs will be perfect with no green, so easy to peel it's almost as though they peel themselves.
