KETO 2.0 PLUS ICE CREAM BARS

These keto ice cream bars are a delicious way to enjoy a quick after dinner keto dessert in the evening. Summertime, many of us are conditioned to want some ice cream, especially when you hear that ice cream truck rolling around the neighborhood. Luckily it’s easy to make your own keto approved ice cream bars. These are sugar-free vanilla ice cream bars that are coated with a keto chocolate and rolled in crushed nuts. They are the closest thing to a real Haagen Dazs ice cream bar that I have tried in a long time. My whole family loves these! I like to prep up a big batch each week for the kids to enjoy throughout the week. Since they are sugar-free, my kids can eat one keto ice cream a day without me worrying they are getting too much sugar!

Ingredients
  

  • 1 pint heavy whipping cream
  • 1/2 cup confectioners Swerve or use sweetener of choice
  • 1 1/2 teaspoon vanilla extract
  • 7 drops vanilla cupcake extract optional
  • pinch of salt
  • popsicle mold
  • 7 oz keto chocolate chips white, milk or dark
  • 1 1/2 tablespoons coconut oil
  • chopped nuts optional

Instructions
 

  • Whisk together all ingredients in a small bowl until combined.
  • Pour ice cream mixture into popsicles molds and insert a popsicle stick. Freeze until hardened or overnight.
  • thin out the chocolate.
  • Dip ice cream bar in the melted chocolate until coated with chocolate.
  • Sprinkle nuts over the melted chocolate and place on parchment paper until chocolate has hardened.

Notes

Ice cream is basically cream, well and egg yolks, but this isn’t that kind of recipe. For these keto ice cream bars, I wanted to keep the recipe very simple. As a busy mom, I don’t have a lot of time to fuss with making extra food and treats for my kids. So when I do want to make a kid friendly keto dessert, it needs to be easy. This keto ice cream bar mixture is basically a sweet cream flavored with vanilla and frozen. This is the easiest keto ice cream you can make! And since we are using heavy whipping cream (around 36% milk fat), you get a creamy ice cream bar with minimal ice crystals forming.
Keto Chocolate
To get that traditional Haagen Dazs ice cream bar look, you have to dip your keto ice cream bar into melted chocolate. The chocolate we use in this recipe is a sugar-free, sugar alcohol free chocolate. My favorite keto chocolate is by ChocZero. Their chocolate is delicious and tastes the closest to regular chocolate compared to other sugar-free chocolate brands. They have a line of keto chocolate chips that come in different flavors – milk, dark, white and sometimes mint.
 
Can I use a different sweetener instead of Swerve?
Absolutely! You can use any sugar-free sweetener you prefer. Just make sure it’s a one-to-one substitute for sugar to maintain the sweetness level.
How can I store these keto ice cream bars?
Store the ice cream bars in an airtight container in the freezer. They will keep well for up to 2 months, but they’re so delicious, they might not last that long!
What can I use if I don’t have popsicle molds?
If you don’t have popsicle molds, you can use small cups or muffin tins. Just insert a popsicle stick into each one once the mixture starts to freeze slightly.
Can I make these dairy-free?
Yes! You can substitute the heavy cream with full-fat coconut milk or a dairy-free heavy cream alternative for a delicious dairy-free version.
