When I first saw these I was intrigued and immediately wanted to have blueberry butter to go with them as well as Keto friendly blueberry syrup. We now have recipes for all three and put together they are resplendent. See bellow, because all three recipes are right here for your convenience
Keto 2.0 Plus Blueberry Chaffles
Is there anything that keto waffles, otherwise known as “chaffles”, can’t do? Here with hints of vanilla and delicious pops of sweet blueberry, they make a light and fluffy breakfast that all will adore. If you love blueberries and waffles, but do not want the guilt or struggle of carbs, these chaffles are your best friend.
Equipment

Ingredients
- 4 eggs
- 1 cup 4 oz. shredded mozzarella cheese
- 1 tbsp coconut flour
- 1 tsp vanilla extract
- 3 oz. 91/3 tbsp fresh blueberries
- Serving
- ½ cup heavy whipping cream
- 6 oz. 11/5 cups fresh blueberries
Instructions
- Pre-heat your waffle maker.
- Place all of your ingredients into a mixing bowl and beat to combine.
- Sit aside to rest for 5 minutes to let the coconut flour absorb some moisture.
- Lightly grease your waffle iron and then evenly spoon the mixture over the bottom plate, spreading it out slightly to get an even result. Close the waffle iron and cook for approx 6 minutes, depending on your waffle maker.
- Gently lift the lid when you think they’re done.
- Use your mixer to whip the heavy whipping cream for topping
- Serve with heavy whipping cream and fresh blueberries.
Notes
Sugar free honey, or syrup would be a good addition. Please make sure you do the rest time as it is very important that the coconut flower absorb the moisture to make the recipe work right

Blueberry Butter
Sweet, tart blueberries are an irresistible summertime favorite around here. We like to make at least one trip to a local up-pick, and then pick up the rest at farmers markets, etc. And this Fluffy Whipped Blueberry Butter has been one of the best things we’ve ever made with fresh blueberries!
This flavored butter is such a treat. It takes already-fantastic recipes, like my grandma’s Blueberry Muffins or Buttermilk Pancakes, and turns them into something extra amazing. Although it’s not as sweet as you would imagine a typical frosting, our daughters jokingly call this luscious concoction “blueberry butter frosting” – it’s wonderful on so many things! You’re gonna love it!
Ingredients
- 4 cups blueberries fresh or frozen
- 1/4 cup lemon juice
- filtered water as needed, to thin
- 2 –4 TBSP maple syrup optional, for sweeter butter
Instructions
- Rinse the fresh blueberries and remove any stems.
- Add the blueberries to a high-speed blender or food processor with lemon juice and blend until the blueberries are completely broken down.
- Add the blueberries to a large saucepan over medium-high heat. Bring to a low-boil, then reduce the heat to a simmer and allow blueberries to cook for 30 minutes, stirring at least every 5 minutes to prevent burning.
- Blueberry butter will thicken as it cooks down. Taste and add a little maple syrup, if desired, for sweeter butter. Blueberry butter is done when it coats your spoon when stirred and leaves open puddles on the saucepan.
- The butter will continue to thicken after you remove it from the stovetop. For thicker butter, cook a little longer. If your butter gets too thick, add filtered water in 1 TBSP increments to reach desired consistency.
- Cool the blueberry completely, then transfer it to glass airtight jars for storage. Store blueberry butter in the refrigerator for 2-3 weeks. Serve with optional Apple Chips!

Sugar Free Blueberry Syrup
Here is a simple, easy to prepare Keto 2.0 Plus Sugar Free Blueberry Syrup or just slather your blueberry chaffles in the most wondrous blueberry flavor you could ever imagine.. It can be used to top Chaffles, Sandwiches, Ice Cream or as a spread for peanut butter and jelly sandwiches. It is extremely easy to make, super to taste and oh so very versatile. Make your cheesecake rise a notch above, make ice cream all that much betterNot only is this great with blueberries, but you can create any kind of berry topping for anything from desserts to sandwiches.
Ingredients
- 2 ½ cups blueberries fresh or frozen
- ¼ cup low carb sugar substitute or powdered erythritol
- ½ cup water (Filtered)
- 1 teaspoon fresh lemon juice
- ½ teaspoon stevia concentrated powder
Instructions
- Mix all ingredients in medium saucepan.
- Simmer 10 to 15 minutes.
- Cool and refrigerate.
Notes
This sauce is best stored in the refrigerator and will keep for about two weeks. If you want to make it last longer it can be placed in the freezer in an air tight, freezer safe, container and will be good for up to 3 months
