I have always enjoyed biscuits, but for many, many years or bacon sausage and egg or any number of variations of meat or meat and egg or even bacon an avocado would be wonderful.  I replaced tomatoes on my BLT a long time ago and even before that I dropped the lettuce, unless I use romaine, but I do love bacon and avocado so much more than I ever did with tomato.

Ingredients
  

  • 2 1/2 cups almond flour
  • 2 teaspoons baking powder
  • 1/2 teaspoons baking soda
  • 3 Tablespoons salted butter
  • 2 whole eggs
  • 3 Tablespoons coconut milk

Instructions
 

  • Preheat oven to 350 degrees F. Prepare baking sheet with nonstick parchment paper.
  • In a bowl whisk together almond flour, baking powder, baking soda.
  • With a pastry cutter or fork cut butter into almond flour mixture until butter is fully cut into the flour and it resembles small pebbles. Stir in eggs and milk.
  • Drop 2 Tablespoons of dough onto baking sheet (apprx 2 inches apart).
  • Bake for 11-15minutes, or until tops begin to brown.
  • Serve immediately or store in an airtight container in the fridge up to 5 days.
