Homemade Diet Dr Pepper Syrup (Copycat Recipe)

When you are trying to replicate the exact flavor of any recipe where you do not know the original recipe (a Copy Cat Recipe) it can be extremely challenging to figure out the exact ingredients and the proper amounts to get the flavor and texture you are looking for. Here we have a syrup recipe that uses monkfruit sweetener in place of Aspartame (a chemical sweetener with many bad side effects) to imitate Diet Dr. Pepper. In the notes you will find tweeks you can use to replicate that Diet Dr Pepper taste in your own kitchen, but with a much safer natural sugar free sweetener. Use more or less, as you feel the need to adjust, especially with the optional Cinnamon and Almond extracts to adjust to your taste buds. This recipe can be used with bottled soda water, the soda option at a self serve soda machine, such as a fast food restaurant or Sam's Club snack bar or with a Sodastream Machine to create a similar tasting beverage to Diet Dr. Pepper that is much better for you.

Ingredients
  

  • 1 cup water
  • 1 cup monkfruit sweetener
  • 1 tablespoon molasses
  • 1 tablespoon cherry extract
  • 1 tablespoon vanilla extract
  • 1 tablespoon almond extract
  • 1 teaspoon lemon juice
  • 1/4 teaspoon cinnamon extract optional
  • 1/4 teaspoon almond extract optional

Instructions
 

  • In a saucepan, combine the water and monkfruit sweetener. Bring to a gentle boil over medium heat, stirring until the sweetener has completely dissolved.
  • Reduce the heat to low and add the molasses, cherry extract, vanilla extract, almond extract, lemon juice, cinnamon extract (if using), and almond extract (if using).
  • Simmer the mixture for about 10 minutes, stirring occasionally to allow the flavors to meld together.
  • Remove the saucepan from heat and let the syrup cool completely. Once cooled, transfer it to a glass jar or bottle with a tight-fitting lid.
  • Store the syrup in the refrigerator for up to 2 weeks.

Notes

If using a sodastream machine: Fill your Sodastream bottle with cold carbonated water, leaving some space at the top for the syrup.  Add 1-2 tablespoons of the homemade Dr Pepper syrup to the carbonated water. You can adjust the amount according to your taste preferences.
Gently stir or shake the bottle to mix the syrup with the carbonated water.
 Taste the mixture and adjust the amount of syrup if needed.  Serve over ice and enjoy your homemade monkfruit sweetened Dr Pepper!  Please note that while this recipe aims to create a similar flavor profile to Dr Pepper, it may not be an exact replica.  Experimenting with the ingredients and their quantities can help you tailor the recipe to your taste preferences.
