This shrimp scampi is truly going to become one of your favorite things to fix for so many reason. A lot of this recipe is concurrent with our AIR FRYER SHRIMP SCAMPI recipe, but there are differences so I’ll let you try them and decide for yourself. This one came first.

Keto air fryer shrimp scampi is popular due to its ease to prepare, it has a very quick cooking time and even with all that has an amazing flavor profile that makes your mouth absolutely water and crave more, but this Shrimp Scampi is actually even better for you because it’s done in the air fryer all while being compatible with a keto diet.

This shrimp scampi recipe takes only 15 minutes to make (if you don’t count the defrosting which you do not have to do if you cook it in the air fryer)! The high-fat ingredients make this a perfect ketogenic lunch or dinner, and the entire dish is gluten-free and low carb since we leave out the pasta.

Several vegetables as well as low carb pasta compliments the texture of the shrimp very nicely and provides tons of vitamins!
If you want to make this dish strictly paleo, you could leave out the parmesan, as most brands aren’t simply parmesan, but loaded with some iffy ingredients as well.
If you’re using grass-fed butter and natural heavy cream, that fits into the paleo lifestyle as well.
In Summary: If you love shrimp,, they can be an amazing keto meal. Just as good if not better than non keto and yet much better for you. One of the reasons I chose this recipe to highlight is that is relatively naturally keto and low carb, so there is not much adapting top do.

AIR FRYER SHRIMP SCAMPI

Ingredients
- 1 tablespoon olive oil
- 1 pound peeled raw shrimp
- 1/2 teaspoon salt
- 2 teaspoons minced garlic
- 3 tablespoons butter
- 1/2 small lemon thinly sliced
- 1-2 sprigs fresh thyme
- 1 teaspoon chopped fresh parsley
- 1/4 cup white wine
Instructions
- Line your air fryer basket with foil or use a parchment paper liner. If you have a large air fryer that uses a small baking sheet, line that with foil and make sure to use a sheet with edges to contain that scampi sauce.
- Put the olive oil into the foil-lined tray. Put the shrimp on top of the oil and season with the salt. Sprinkle the garlic over the shrimp.
- Slice the butter into several pats and put on top of the shrimp.
- Lay the lemon slices over the top of all of it, and put the fresh thyme and parsley on top of that.
- Pour the white wine in, and put the basked into the fryer.
- Turn the air fryer to high. Ours goes to 390°. That’s where we cooked these at, but anywhere from 375°F to 400°F will work. Just adjust the cook time accordingly. Cook time will also vary based on how close together your shrimp are. Shrimp is fully cooked when the internal temperatures reaches 120°F (for ideal texture and to prevent dryness). The FDA recommends 145°F. You’ll have to decide where in that range you are comfortable.
- Cook for 8-12 minutes, or until the shrimp reach that minimum internal temperature.
- Remove and enjoy!
