Bacon Egg and Cheese Bites
Ingredients:
4 Large Eggs
2 ounces Cream Cheese (softened)
1 Cup Chopped Cooked Bacon (5-6 slices of thick bacon)
1 1/4 Cup of Shredded Cheese – Your choice, but Cheddar and Parmesan are a good start. You could use pepper jack, mozzarella etc
1/3 Cup of Coconut Flour or Almond Flour
1/2 Tsp of Baking Powder
Instructions:
Preheat oven to 350 degrees F.
In a medium mixing bowl combine all of the ingredients. Break up the cream cheese as you stir to eliminate lumps
Allow the mixture to sit for 10 minutes so the flour can absorb most of the moisture and this step is a must
Spray a regular mini muffin pan or use a silicone muffin pan and fill each cup about 3/4 full
Bake 15-18 minutes or until golden browned cooked through. You may have to experiment a little as everyone’s oven is slightly different
