I like to take something that I like and make it better. I am constantly looking for recipes to change and make better. This is my twist on an Atlanta classic! Made in the air fryer these come out extra crispy and really juicy. The lemon pepper butter takes these skewers to another level!

1 air fryer
1 Glass Bowl
Metal or wooden skewers. If using wood skewers soak in water so they will not burn in air fryerl
Ingredients
3lbsboneless skinless chicken thighs cut into 1 inch pieces
1tspsalt
1tspblack pepper (fresh ground)
1tbspgarlic minced or grated
1tbsplemon zest
1/4tsppaprika
1tbspolive oil
Lemon Pepper Butter
1/2stick unsalted butter partially melted
1tspblack pepper fresh ground
1/2tspsalt
1/4tsppaprika
1/4tspAllulose
2tbsplemon juice
Instructions
In a bowl add salt, black pepper, minced garlic, lemon zest, and paprika. Mix everything until thoroughly combined.
To that bowl add the olive oil and the chicken thighs and pour it all into a plastic bag and make sure all the pieces of chicken are coated. If you would like, you can prepare to this point and refrigerate for 20 minutes to an hour or even overnight.
Skewer your marinated chicken thighs packing the meat onto each skewer tightly.
Once all your meat is skewered, air fry for 12 mins @400F.
Flip and air fry for 8-10 mins @400F or until the internal temperature reaches 165F
Make your Lemon Pepper butter
Mix your salt, black pepper, lemon zest, paprika, allulose together with a whisk in a bowl
Partially melt your butter in a glass bowl
Take your partially melted butter and add in, salt, black pepper, lemon zest, paprika, allulose, and add lemon juice
Mix thoroughly until all ingredients are fully incorporated.
Once the skewers are cooked, baste with the lemon pepper butter and serve immediately.

If you want to experiment you can put Pineapple between the chicken or Pineapple and onion or Green, red or Orange Peppers. All of these additions will add flavor as well as tenderize the meat. You can also substitute chunks of beef steak, or even pork.
