Ingredients
  

  • 4 Eggs AA Large
  • 2 ounces Cream Cheese softened
  • 1 Cup Chopped Cooked Bacon Thick Sliced is preferable
  • 1 1/4 Cup Shredded Cheese Cheddar - Parmesan or your choice
  • 1/3 Cup Coconut or Almond flour
  • 1/2 Tsp Baking Powder

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a medium mixing bowl combine all of the ingredients. Break up the cream cheese as you stir to eliminate lumps
  • Allow the mixture to sit for 10 minutes so the flour can absorb most of the moisture and this step is a must
  • Spray a regular mini muffin pan or use a silicone muffin pan and fill each cup about 3/4 full
  • Bake 15-18 minutes or until golden browned cooked through. You may have to experiment a little as everyone's oven is slightly different
